Preheat oven to 400 degrees.

Place the olive oil in a large ziptop bag.

Add sweet potatoes and shake to coat them.

Put the bread crumbs, Parmesan cheese, salt and pepper on a dish and coat potatoes.

Put the potatoes on a large, rimmed baking sheet. Spread them out evenly.

Bake for 15 minutes, and bake another 15 minutes on the other side.

Spring with oregano.
