Gluten Free Almond strawberry grapes cake

  • 100 almond meal
  • 125 g potato starch
  • 160 yogurt
  • 125  g caster  sugar
  • 3 eggs
  • the grated rind of a lemon
  • 250 g strawberry grapes
  • icing sugar
  • 1 teaspoon of yeast
  • icing optional
  • icing sugar
  • milk/lemon juice/orange juice
  1. Whisk the egg whites with an electric mixer until soft peaks (around 3 to 4 minutes)Separate the egg whites from the yolks and beat the egg whites until stiff then add the caster sugar and whisk until stiff peaks form (around 1 to 2 minutes).

  2. In another bowl, whisk the egg yolks with the remaining sugar until the mixture is light and fluffy. Add the grated lemon rind, the starch, the almond flour and the yogurt and stir until all the ingredients are well blended.

  3. Peel the grapes and add to the mixture.
  4. Add the whipped egg whites last, stirring gently with a spatula from the bottom upwards.
  5. Butter  a round baking pan of 20 cm in diameter (or, like me, a bundt mold) and sprinkle it with a mixture of starch and sugar.
  6. Pour the mixture into the pan.
  7. Bake in preheated oven at 180 ° C for about 45 minutes or do the toothpick test: inserted it in the center of the cake, it must come out dry and clean.
  8. Take the cake out of the oven and let it cool completely then turn it out. Sprinkle with icing or icing sugar and serve.
